The real aristocrats of Languedoc rosé emerged as Domaine Montrose.
APPELATION: IGP Pays d’Oc
SOILS: Sourced from a rigorous selection of the best Languedoc vineyards.
GRAPES: Grenache, cinsault
WINEMAKING: Grapes are harvested at night to preserve freshness. They are destemmed before a short skin contact or direct pressing. Fermentation temperature is maintained between 15°C to 18°C (59°F to 64°F) to retain fruit aromas. Wines resulting from the different terroirs and grapes are blended after fermentation and then aged in stainless steel vats. It is bottled during winter and spring. Domaine Montrose is a pioneer of rosé winemaking in the Languedoc. It has become a benchmark for rosé wines in the region and beyond.
TASTING: Light and bright color. The bouquet reveals red berries and citrus flavors. Elegant wine with a nice freshness.
SERVING: Enjoy it chilled on its own or with raw vegetables, salads, charcuterie or grilled fish.

VIOGNIER - The Atypical White
Our Viognier is purposely atypical! It is livelier and less exuberant than those of most of our colleagues.
We like it for its freshness and most importantly for its balance. Drink young.

APPELLATION: /GP Cotes de Thongue
SOILS: calcareous-clay and siliceous-clay gravel
GRAPES: 100% viognier
WINEMAKING: each terroir is vinified separately. Grapes are destemmed before a skin contact or direct pressing. Fermentation temperature is maintained between 15°C and 18°C (59- 640F) to retain fruit aromas. Wines resulting from both terroirs are blended after fermentation and then aged in stainless steel vats. Wine is bottled during Winter and Spring.
TASTING NOTES: light yellow color with green hints. Nose and flavors of exotic fruits, mango, cut hay
SERVING: Enjoy it chilled on its own or with fish, shellfish, Asian food, cheeses.
HVE3 CERTIFICATION AND CARBON NEUTRAL: Both Montrose rosé and Montrose Viognier come from the vineyard ofDomaine Montrose, which is certified HVE 3, "Haute Valeur Environnementale level 3", the highest level of France's High Environmental Value Certification. It's a result of the vineyard's efforts towards virtuous agriculture: planting 2000 trees to preserve biodiversity, planting vineyard ground cover, mechanical soil work, pheromone dispensers, and etc. To limit the impact on the planet, the vineyard has reduced the CO2 emissions to a minimum. The vineyard also offset the CO2 emission by financing in ecological initiatives.

#1: CARIGNAN NOIR, (OC)RIGINAL STARS
Since his childhood, Olivier's favorite places to play have been the vineyards and the wine cellar at his family's wine estate founded in 1701 in Pézenas. With his upbringing, he developed a passion for nature and the Languedoc wines.
Carignan Noir is one great Mediterranean grape. Today it maybe less known. In old times, it was a Star in the Languedoc.
To capture the essence, yields are limited by growing vines on stony soil with traditional gobelet pruning. It gives rich dark fruit and spice notes with ample freshness.
ORIGIN: Roquessels, Hérault, IGP Pays d’Oc
GRAPES : Carignan Noir
SOILS : Schist
ALCOHOL : 13.5%
VINIFICATION : Grapes are destemmed before a 3-week maceration, with temperature control and regular pump overs to enhance the aromatic expression. Bottling takes place in late winter to preserve freshness
TASTING: The best way to enjoy the wine is to invite friends over, open a bottle and enjoy the moment. This wine has aromas of rich dark stewed fruit and spice, yet remains fresh and delightful.

APPELLATION: IGP Cotes de Thongue
SOILS: volcanic, calcareous-clay and siliceous-clay gravel
GRAPES: 35% grenache, 35% syrah, 30% cabernet sauvignon
WINEMAKING: Each grape variety and each terroir are vinified separately. Short maceration (one week) at low temperature (22°C, 71°F) for syrah and grenache. Long maceration (three weeks) at higher temperature (29°C, 84°F) for cabernet-sauvignon with pumping over and punching down the cap (pigeage) to obtain more structure. Wines from the different terroirs and grape varieties are blended after winter and then aged in concrete tanks. Wine is bottled during Spring.
TASTING NOTES: garnet red color. Nose of red fruit, blackcurrant and cocoa. The mouth is crunchy and round.
SERVING: Enjoy it slightly chilled on its own, or with grilled meat, pastas or cheeses
