Hunter Valley Semillon's reputation for its unique character and excellent quality has been widespread.
This selection is usually made in an un-oaked style, which will age for a significant period. It has citrus fruit characteristics of lemon and lime and is a crisp, clean, refreshing drink. Left for 3-4 years, it will develop hints of honey and a smokiness similar to barrel ageing.
Semillon is the predominant variety on the Ernest Hill Vineyard, with three blocks producing slightly different styles. The Cyril comes from the smallest block on the vineyard, being a little over one acre. This legacy white wine has been in production since 2002 and it's a highly recognised wine among semillon lovers in Australia.
Cyril was father and grandfather to the Wilson family. The Cyril Semillon is sourced from an older block, exceeding 40 years. Hand picked, lightweight and tensile. Scents of lanolin, quince paste, dried hay and lemon drop. Real purity and persuasion to the aromatic spectrum. This is already accessible, but will really hit its straps in a few years.
