CARIGNAN NOIR, (OC)RIGINAL STARS
Since his childhood, Olivier's favorite places to play have been the vineyards and the wine cellar at his family's wine estate founded in 1701 in Pézenas. With his upbringing, he developed a passion for nature and the Languedoc wines.
Carignan Noir is one of the great Mediterranean grape. Today it maybe less known. In old times, it was a Star in the Languedoc.
To capture the essence, yields are limited by growing vines on stony soil with traditional gobelet pruning. It gives rich dark fruit and spice notes with ample freshness.

VINIFICATION : Grapes are destemmed before a 3-week maceration, with temperature control and regular pump overs to enhance the aromatic expression. Bottling takes place in late winter to preserve freshness
TASTING: Carafe the wine for 15-20 minutes before drink. The best way to enjoy the wine is to invite friends over, open a bottle and enjoy the moment. This wine displays tranquil velvet red colour, with aromas of rich dark fruit and spice, yet remains fresh and delightful. It pairs very well with dark chocolate for leisure, stir-fried black pepper beef, or your daily meals. Chill the wine overnight for a better experience.
