Wine Digest: Discover Sémillon

Sémillon [seh-mee-yon], originated from Bordeaux, moved to Australia in 1831. It has since grown into a success, becoming the #1 wine variety in Hunter Valley ahead of Shiraz and Chardonnay. Hunter Valley Semillon is a benchmark, among some of the best in the world!

Different from most of the white wines that are to drink young, Semillon has an amazing aging capability that can be cellared for more than 10 years. When it's young, it has light tropical fruit flavors of lemon and lime. Left for 3-4 years, it will develop hints of honey, vanilla toast, similar to barrel aging.

With a lower alcohol content of 10%-11.5%, Semillon pairs well with fresh seafood like raw sashimi, oyster, white fish, and sushi.

The Cyril Semillon is a legacy white wine from Ernest Hill Wines, in production since 2002. It comes from a small block of vineyard, with a majority over 30 years old. We have the 2017 and 2019 stock available. The 6-bottle pack is now at 10% off.

Semillon grape is also made into some of the fine sweet wines. The Luna Spark Dessert Wine comes from late picked Semillon grapes. "It is a semi-sweet wine with a pleasant hint of lemon and pear, and a gentle touch of frizz" - customer tasting note.

Young Semillon needs to be chilled to a lower degree, while aged Semillon less chilled to enjoy the fuller flavor as it develops.
